Watermelon Gin Rickey

The Gin Rickey was invented in a bar in Washington DC called Shoemakers during an especially brutal heat wave in the 1890’s. This classic drink provides an effervescent kick of floral gin and lime. Watermelon adds complexity to the flavor.

Yields 4 ten-ounce Collins glasses


12 oz. gin

4 oz. watermelon puree, strained

2 limes, cut into quarters

Chilled club soda, as needed

  • Fill the Collins glasses with ice.
  • Slice the limes into quarters. Squeeze two quarters into each glass.
  • Add 3 ounces of gin to each glass.
  • Add 1 ounce of watermelon puree to each glass.
  • Top with club soda.
  • Stir and serve.
